I am currently taking an Artisan bread Class...that is art-i-san not ar-tee-sian...and I love it. I like learning about the different types of bread and how to mix, score and bake them. There isn't always a lot of ingredients that go into bread but there is a lot of effort. We have made just plain baguettes, German breads, Italian breads and last week was laminated dough. We made croissants. It was really fun...one of my favorite weeks.
We take dough and roll it out...we roll out butter to just about the same size in height and then fold the dough over the butter. Then it gets put into the fridge. After 30 min it gets taken out and rolled out thin. Then it get folded on top of itself and put back in the fridge. This happens a few times and when the final product is baked it has many layers from where the butter and dough have been layered on each other and is very flaky. I had so much fun doing this. Next week is more laminated dough! YAY!
